Stir-Fried Bok Choy with Garlic

Tender bok choy with a clear, garlicky finish. Perfect as a side or over rice.
Ingredients
- 3–4 baby bok choy or 2 medium bok choy
- 4 cloves garlic, sliced
- 2 tbsp neutral oil
- 2 tbsp water or vegetable stock
- Salt and white pepper to taste
- Optional: a splash of rice wine
Method
- 1Trim bok choy bases and separate leaves if large. Rinse and drain well.
- 2Heat oil in a wok over high heat. Add garlic and stir until fragrant, about 30 seconds.
- 3Add bok choy and stir-fry for 1–2 minutes. Add water or stock, cover briefly to steam, then uncover and season with salt and white pepper.
- 4Serve immediately, with the garlic and pan juices spooned over.
