Stir-Fried Bok Choy with Garlic

Tender bok choy with a clear, garlicky finish. Perfect as a side or over rice.

Ingredients

  • 3–4 baby bok choy or 2 medium bok choy
  • 4 cloves garlic, sliced
  • 2 tbsp neutral oil
  • 2 tbsp water or vegetable stock
  • Salt and white pepper to taste
  • Optional: a splash of rice wine

Method

  1. 1Trim bok choy bases and separate leaves if large. Rinse and drain well.
  2. 2Heat oil in a wok over high heat. Add garlic and stir until fragrant, about 30 seconds.
  3. 3Add bok choy and stir-fry for 1–2 minutes. Add water or stock, cover briefly to steam, then uncover and season with salt and white pepper.
  4. 4Serve immediately, with the garlic and pan juices spooned over.
