Winter Melon Soup with Ginger
冬瓜湯

Light, clear broth with soft winter melon and a hint of ginger. Comforting and simple.
Ingredients
- 500g winter melon, peeled, seeded, cut into 2cm chunks
- 4 thin slices ginger
- 1 litre vegetable or light chicken stock
- Salt and white pepper to taste
- 1–2 scallions, sliced, for garnish
- Optional: goji berries, dried red dates
Method
- 1Bring stock to a boil in a medium pot. Add ginger and winter melon. Return to a boil, then reduce to a gentle simmer.
- 2Simmer until winter melon is translucent and tender, about 20–25 minutes.
- 3Season with salt and white pepper. Add goji or red dates if using and simmer 2 more minutes.
- 4Ladle into bowls and garnish with scallions. Serve hot.
