Winter Melon Soup with Ginger

Light, clear broth with soft winter melon and a hint of ginger. Comforting and simple.

Ingredients

  • 500g winter melon, peeled, seeded, cut into 2cm chunks
  • 4 thin slices ginger
  • 1 litre vegetable or light chicken stock
  • Salt and white pepper to taste
  • 1–2 scallions, sliced, for garnish
  • Optional: goji berries, dried red dates

Method

  1. 1Bring stock to a boil in a medium pot. Add ginger and winter melon. Return to a boil, then reduce to a gentle simmer.
  2. 2Simmer until winter melon is translucent and tender, about 20–25 minutes.
  3. 3Season with salt and white pepper. Add goji or red dates if using and simmer 2 more minutes.
  4. 4Ladle into bowls and garnish with scallions. Serve hot.
