Scallion Oil Noodles

A classic Taiwanese staple: chewy noodles tossed in fragrant scallion oil. Ready in minutes.
Ingredients
- 200g fresh or dried wheat noodles
- 6–8 scallions, cut into 5cm lengths
- 4 tbsp neutral oil
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce (optional, for colour)
- 1 tsp sugar
- Toasted white sesame seeds
Method
- 1Cook noodles according to package directions. Drain and toss with a little oil to prevent sticking. Set aside.
- 2Heat oil in a wok or skillet over medium heat. Add scallions and fry slowly until wilted and lightly golden, about 5–7 minutes. Do not burn.
- 3Remove from heat. Stir in soy sauces and sugar. Taste and adjust.
- 4Divide noodles between bowls. Top with scallion oil and sesame seeds. Toss at the table and serve immediately.
