Scallion Oil Noodles

A classic Taiwanese staple: chewy noodles tossed in fragrant scallion oil. Ready in minutes.

Ingredients

  • 200g fresh or dried wheat noodles
  • 6–8 scallions, cut into 5cm lengths
  • 4 tbsp neutral oil
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce (optional, for colour)
  • 1 tsp sugar
  • Toasted white sesame seeds

Method

  1. 1Cook noodles according to package directions. Drain and toss with a little oil to prevent sticking. Set aside.
  2. 2Heat oil in a wok or skillet over medium heat. Add scallions and fry slowly until wilted and lightly golden, about 5–7 minutes. Do not burn.
  3. 3Remove from heat. Stir in soy sauces and sugar. Taste and adjust.
  4. 4Divide noodles between bowls. Top with scallion oil and sesame seeds. Toss at the table and serve immediately.
